I love pizza for breakfast- cold pepperoni is my absolute favorite! However, I fully admit that is very unhealthy and bad for me. Yet, I can't resist the internal call of my 'fat girl' self and would rather eat a slice of pizza if available than some bowl of gloppy oatmeal. And every Wednesday, my school serves breakfast pizza and it smells so good and actually tastes very good- even for being rather plain. It's pretty simple, sausage and mozzarella melted onto an English muffin. So I missed out last Wednesday, but got a great idea yesterday afternoon. Why not make it myself at home? So I did just that... made it a bit more than just plain sausage and cheese.
Belinda's Breakfast Pizzapalooza
2 Thomas' Bagel Thins
Sausage (hot)- about the size of 2 patties
1/4 cup diced onion
1/4 cup diced green peppers
mozzarella cheese
marinara sauce
Italian seasoning
preheat oven to 350
1. Crumble sausage and brown with onions and peppers. Sprinkle teaspoon of Italian seasoning as it cooks.
2. Split the bagel thins. Spread marinara on bagel. Top with sausage mixture and cheese.
3. Bake for 5 minutes then broil for 2-3 minutes. Just watch them!
Dave said these were "OK" which is not the total Dave approval statement. I think he was more concerned that he only had two for breakfast. I, on the other hand, thought them wonderful and just the perfect portion for this wonderfully cool Sunday morning! What a simple and easy way to put a twist on breakfast. So while this recipe is NOT fully Dave approved, it is Dave OK'ed! Happy Sunday... planning dinner now- a southern staple!
