Onion Rings and Spring

I really do love winter. I like snuggling inside my house with cups of coffee and bowls of chili, but today is the first day of spring. Spring means you can sit outside without freezing your booty off and enjoy the sights and sounds. It's also the start of GRILL SEASON!!! I have had a very relaxing Saturday sitting in my new lounge chair while half listening to the NCAA tourney results (as a HOG fan, I don't have much care for it this year) on the porch. NOW it is time to grill...

Just simple burgers seasoned with garlic powder, cracked black pepper and cajun seasoning. However, I am going to share my recipe for the MOST perfect onion rings ever... don't be put off by the beer in the recipe as with all alcohol, it cooks out!

1 large onion, cut into slices (more if you'd like)
1 1/2 cups of flour
10 oz beer
2 eggs white- beaten

1. Combine the flour and and beer. This should make a paste- not too thick and not too thin. Sit aside an hour
2. Prepare your deep fryer.
3. When oil is ready, beat the egg white into stiff peaks; fold into the beer batter.
4. Dip onions into batter and fry in small batches. 5 -7 minutes watching carefully.

You will be delighted with these! It's like you went to the local fish camp!!

Sunday Pot Roast- Crock Pot Style!

Dave really did get me a new crock pot for Christmas- he really did and I love it! In fact, I ok'ed this and was with him when he bought it. I love crock pots and am really trying to focus on new recipes to use with this wonderful machine. Today, I am making a roast-crock pot style!

I love a good roast... and when you can get them on sale, stock up! While trying to figure out our 'cheat meals' this weekend, I was thinking enchiladas, lasagnas, and other things that ultimately would mean I had to do some serious shopping and money spending. Then I remembered that I had a roast in the freezer! The light came on and Belinda has NO shopping to do!!

So here is what I do to prepare a slow cooker pot roast!

1. I started with a 3 lb chuck roast which I salt and pepper and then seared off in olive oil. Searing the meat keeps the juices in and should be done.
2. I added 1/2 chopped onion to the bottom of my crock pot, and put the roast on top of the onions. I added 4 cups of water and 2 tablespoons of worchestershire sauce. Then I add my seasonings: 2 teaspoons garlic powder, 1 teaspoons cracked black pepper, 2 teaspoon cumin, and 2 teaspoons salt. You can add whatever seasonings you would like. I let this cook for 1 hour on high and then turn down to low
3. After another two hours on low, I add 1 can of cream of mushroom soup; 1/2 more cup of chopped onion and 1/2 cup of chopped bell pepper. Salt and pepper to taste.
4. After another hour on low, I add one bag of frozen vegetables. I like the ones for stews as they are chunkier. Allow this to cook for another 1.5 to 2 hours on low. Although it's a matter of choice and you can decide to use fresh veggies too, but just have to compensate for cooking those through.
5. The last thing added is about 2.5 cups of instant rice (or cooked rice) This creates such a great flavor for the rice. The liquid is absorbed into the rice and is soooo amazing!!! Trust me, you'll just want to eat the rice!!!


I guess this isn't a recipe, but more of how I do something... just play with it!

A southern must

All my life, one meal has made me salivate: Chicken fried steak with gravy is that meal. While watching Paula Deene last week prepare the meal, I tried to remember the last time I had made it. Dave couldn't remember so I decided I needed to remind him why he married me!

As I know my Daddy loves that meal also- oh and let's face it, so does my Momma- I invited them up to partake with us. The whole meal was steak, rice, gravy, green beans, and beer muffins.

I am going to share how I make my steak. I season the steak with garlic salt, pepper, and hot sauce. I allow this to sit for at least 30 minutes. I use the the dry, wet, dry method with an egg/milk mixture and seasoned flour. I season the flour with a tablespoon of pepper and a tablespoon of garlic powder. Dredge the steak pieces in flour, dunk in egg mixture, and then back into flour. I promise you will have a wonderful batter for your steak!!

Someday I might actually try to share how to make gravy!! I am just happy it comes out well most times!

The meal was awesome and was just what the doctor ordered!!
