Onion Rings and Spring

I really do love winter. I like snuggling inside my house with cups of coffee and bowls of chili, but today is the first day of spring. Spring means you can sit outside without freezing your booty off and enjoy the sights and sounds. It's also the start of GRILL SEASON!!! I have had a very relaxing Saturday sitting in my new lounge chair while half listening to the NCAA tourney results (as a HOG fan, I don't have much care for it this year) on the porch. NOW it is time to grill...

Just simple burgers seasoned with garlic powder, cracked black pepper and cajun seasoning. However, I am going to share my recipe for the MOST perfect onion rings ever... don't be put off by the beer in the recipe as with all alcohol, it cooks out!

1 large onion, cut into slices (more if you'd like)
1 1/2 cups of flour
10 oz beer
2 eggs white- beaten

1. Combine the flour and and beer. This should make a paste- not too thick and not too thin. Sit aside an hour
2. Prepare your deep fryer.
3. When oil is ready, beat the egg white into stiff peaks; fold into the beer batter.
4. Dip onions into batter and fry in small batches. 5 -7 minutes watching carefully.

You will be delighted with these! It's like you went to the local fish camp!!
