No reason to run to Mickey D's this morning...

Dave is a breakfast kind of guy. He does love him some breakfast, and his favorite thing to run and pick up are the breakfast burritos from McDonald's-- So yes, I could have given him $5 this morning and saved myself some time and effort, but when I fell and wrecked my knee, I was unable to do a lot of things around the house. So now that I am able to move better (I can see the dog about to go and have managed to get her outside before the 'start of business'), I would prefer to make things myself. I have made these before, but not shared the recipe. As you can imagine, it is not hard to do, but who really thinks of making burritos from breakfast?

Keep in mind, we are a family of two so increase the amounts to fit your family.

1/4 lb. hot sausage
1 tsp taco seasoning
4 eggs
1 tbsp minced dried onion
4 flour tortillas- burrito size
shredded cheese
salsa- this is MY homemade salsa!
sour cream- fat free


1. Brown the sausage. Add taco seasoning and minced onion.


2. Break the eggs up in a bowl before adding them to the pan to scramble.
3. When eggs are done, add approximately 1/4 cup of cheese and allow to melt a bit. This will help the egg mixture stay together.
4. Spoon 1/4 of egg mixture onto each tortilla. Add more cheese, salsa, and sour cream (depends on what you like- guacamole works well too). Roll burrito and enjoy!
