Have you figured out that I love cinnamon?

I really do love cinnamon- the smell and the flavor are like magic to me. I wanted to update a recipe today. I made my cinnamon biscuits this morning, but did make the change that I mentioned I might make when I first posted the recipe.

To my biscuit recipe, I added 1 tablespoon of cinnamon and 3 packets of Equal (or whatever you have around). And the results were exactly what I was hoping for: amazing!! We didn't need to put a thing on these biscuits- no butter or syrup was needed. We had three each!!

So add the cinnamon to the biscuits too... it's a great thing!

Happy Valentines Day

I had all the GREAT intentions of getting up this morning and making cute little heart shaped cinnamon and raspberry pancakes for a surprise V-D breakfast.... well, I never bought the heart shaped cookie form I intended to buy NOR did I buy the raspberries to make a sauce-so my sweetie pie just got cinnamon pancakes for breakfast. He did however enjoy them greatly.

I have never tried to make pancakes without using Bisquick. I thought about it yesterday and even looked for several recipes on the web, but alas, I gave in and pulled out every southerner's savior: Bisquick. Once I actually tried to follow the instructions for making pancakes - those that are on the box- and well, it did not turn out well. Pancakes are a feel and a look kind of thing so just feel it!

Cinnamon Pancakes:
Add 1 tablespoon of cinnamon and 2 packets of equal to the batter. If you'd like more cinnamon, add more!

I sprinkle a bit more cinnamon after pouring the pancakes.

You can make cinnamon butter to go with this if you'd like.

It's been a while and I didn't realize it...

I missed posting recipes for the Superbowl, but then again I did not make too much on that day. We tried to take it easy with just burgers, cheese dip, and a few wings. I made Velveeta-Rotel Cheese dip which my father so lovingly calls "Dippy Dippy Doo". I have changed the traditional way my mom made this dip so I thought I would share that.

1 pound Velveeta
1 can Rotel- decide on your own degree of heat
mix and melt in microwave. Stir

What I do differently is this: I cook about a 1/2 cup green peppers and 1/2 cup onions with about 1/2 pound of ground chuck. Iusually season that with taco seasoning or cajun seasoning. I add that to the cheese mixture and stir well... You can add more jalepenos or salsa if you'd like...

Just a spicer more filling dip!!
